About as easy as it gets. I use the same method, but use a dedicated line with a loop over the winch post. I keep that line in my truck.

I can see where you’ll run into some issues going forward with this setup. As long as you monitor the the bolt tightness where your wood connects to Your frame, you should be okay for a while. I may suggest get some L brackets to help secure the frame of your wood. As a metal finisher, I didn’t see where you properly removed the rust from your frame and axel. Those areas will likely rust through in a short amount of time. I’ll be doing a video on how I convert my 20’ boat trailer into a four kayak hauler with lockable storage. Not sure how large your kayaks are, but I have Hobies and doing perpendicular bracing like you’ve done will not work. I’ll be adding lengthwise bunks for more even support. You appear to live in a warm climate and with kayaks laying across perpendicular supports can alter your bottoms.

Polycraft tuffy comes in at over half the price of this. And it's arguably more stable due to it's width. Although it's 3 feet shorter but Not seeing how they came up with their price point of 13000.

Why do they bite the fake fish if it has no smell no taste?

my issue is that for about the same price as this boat and motor combo, I can have a 15'-16' name brand skiff with a 20hp 4 cycle; which will outperform circles around this boat. apparently price factor was not part of the project planning.... just sayin
